Chocolate Chip Zucchini Cake
| 1½ cups | cups sugar |
| ½ cup | margarine or butter (softened) |
| ¼ cup | oil |
| 1 tsp | vanilla |
| 2 | eggs or egg replacements |
| 2½ cups | flour |
| ¼ cup | unsweetened cocoa |
| 1 tsp | baking soda |
| ½ cup | buttermilk (or 1½ tsp lemon juice plus enough milk to make ½ cup) |
| 2 cups | shredded zucchini |
| 1 cup | chocolate chips |
- Heat oven to 350° F, grease and flour 9 X 13 in. pan.
- Cream first five ingredients together. Alternate dry ingredients with milk into creamed mixture. Fold in last three ingredients. Pour into cake pan and bake 35 to 45 minutes or until toothpick comes out clean.
