Chocolate Banana Muffins
| 1/3 cup | oil | ![]() |
| ½ cup | sugar | |
| ¼ cup | applesauce or milk replacement or 1 egg | |
| 1 cup | mashed banana | |
| 1½ cups | chocolate chips - split into 2 portions | |
| 1 cup | white or whole wheat flour | |
| 2 tsp | baking powder | |
| ½ tsp | salt | |
| ½ tsp | cinnamon |
Combine dry ingredients. Stir together liquid ingredients including banana and 1 portion of chocolate chips. Combine dry and liquid mixtures together gently stirring, Spoon into muffin cups, sprinkle remaining portion of chocolate chips over tops of muffins. Bake 15-20 minutes at 350° (180°C).
