Butterscotch Pinwheels
Preheat oven to 450°F.
- Cream until soft and then set aside:
1/3 cup margarine
2/3 cup brown sugar - Blend:
1¾ cup flour
2 Tbsp sugar
4 teaspoons baking powder
1 tsp salt - Cut in finely:
1/3 cup margarine
- Add:
¾ milk or soy milk
- Stir to make a soft dough.
- Turn onto floured surface and knead 8-10 times. Roll to a 9’ square. Spread on brown sugar mixture. Roll up as for a jelly roll, seal edges. Cut into 12 equal slices and arrange cut side down in greased muffin cups. Bake for 12-15 minutes.
